THE MANCINI FAMILY
Lisolo Farms is a premium lean beef producer in Ontario, proudly operated by the Mancini family. The Mancini name is synonymous with quality, tradition, and a deep commitment to sustainable farming practices. The Mancini family's journey in agriculture began with a vision to provide the highest-quality beef to our community. Today, Lisolo Farms continues to thrive under the careful stewardship of the Mancini family, ensuring that every cut of beef meets our stringent standards.

THE RANCHER
Curtis MacFadyen is a third-generation rancher raised on a farm in the local area. His father, Hugh, and grandfather, John, bred and raised horses and cattle only a few miles from Lisolo Farms.
A true Canadian country boy, Curtis joined the Canadian Army at 18 years old and has completed three tours of duty overseas. While in the army, Curtis met his wife, Gabrielle, who was in the Canadian Air Force. Since retirement, they now parent a small army of four boys: Duncan, Gord, Hank, and Jason. Curtis and Gabrielle love growing organic foods and have a passion for livestock, genuinely reflected in the care they provide to the livestock here at Lisolo Farms.
HISTORY OF SPECKLE PARK
The Speckle Park breed is a Canadian mix breed that began in Saskatchewan and Alberta, along the Yellow Head Highway, between North Battleford, Saskatchewan and Spruce Grove, Alberta. At that time, Speckle Park was the second breed of beef cattle in Canada to have distinct breed status.
Speckle Park was created over a period of fifty years. It is now a distinct purebred with a closed herd book. The genetic base comprises the British White Cow, the Black (Aberdeen) Angus, and a Teeswater Shorthorn.


Agriculture Canada awarded approval in 1993 for the Canadian Speckle Park Association to become incorporated under the terms of the Canadian Animal Pedigree Act. This would encourage the development of the Speckle Park cattle as an evolving breed.
In 1995, ministerial approval was made for the first set of by-laws by the Canadian Speckle Park Association. Subsequently, in 2006, Articles of Incorporation of The Canadian Speckle Park Associations were edited to reflect that Speckle Park became a distinct breed of purebred cattle in accordance with the Canadian Pedigree Act.

Herd grazes on a nutrient rich 130 - acre land because the farm is located on top of limestone.

Our herd and their calves are protected by highly trained donkeys.

Our cattle eat the finest mix of alfalfa, clover, and mixture of grasses.

Our herd has open access to shelter in case of bad weather.

Our herd is monitored daily by the lead hand to ensure that they are all healthy and thriving.

Dry Aging
Dry-aged beef costs more because of the primals and subprimals in a humid-controlled environment. Since beef is made up of approximately 70% water, the meat evaporates, causing the muscle’s composition to increase, making the beef more flavourful.
Dry aging means storing the beef, with no packaging, for a managed and prolonged period, approximately 20 days, with primal and subprimal cuts refrigerated at a controlled temperature. The temperature will remain at the controlled temperature, at about one to three degrees and 80% humidity, to help prevent less microbial growth during drying.
