Filet mignon is cut from the tip of the tenderloin, a delicate and tender area of the loin primal. The filet is so tender because it comes from a muscle cow’s rarely used, the tenderloin. The tenderloin only makes for 1% of the total percentage of the finished cut. That makes the filet very rare and thus more expensive. However, with each succulent bite, you will agree, worth it!
